Anglesey County Show mixed fruit syryp recipe

You can pretty much make a cordial out of any really flavoursome fruit. I have made all kinds of cordials in the past the nicest being this one or elderflower and the worst was probably a crab apple one – completely lost its apple flavour. I think its best to try to stick with stronger flavours and try and remember the stronger the flavour, the more you can dilute it and the longer it will last.
Equipment needed

- Heavy bottomed saucepan
- Large bowl
- Wooden/Plastic spoon
- Muslin cloth
- Clip top bottles
Ingredients needed
- 1kg Mixed soft fruit of your choice fresh or frozen – I used redcurrants, blackcurrants, raspberries, gooseberries, strawberries and last years left over blackberries from the freezer
- Juice and zest of 1 lemon
- 350g Granulated sugar
- 1/2 Litre cold water

- Wash all fruit
- Place in pan with water, lemon juice and zest. Gently bring to the boil. Once boiling, leave to simmer until the fruit is very soft and pulpy
- Once fruit is soft strain juice through muslin cloth into the large bowl and leave to drain overnight or for as long as you be patient
I tied mine to a rack and left the bag drain for a few hours
- Once drained transfer the juice back to the clean pan and add sugar
- Heat the juice up on medium heat until the sugar has dissolved and funnel into clean sterilised jars(I used with sterilising solution or dishwasher to sterilise my jars)
- Now dilute to taste and enjoy!

Also, forgot to mention we won 2nd with the cordial which we were really pleased with!!
